FOR DIABETIC PATIENTS, RICE IS BETTER THAN WHEAT

You may think I am raving!

In Keralam where the number of diabetic patients is increasing at a much high rate, doctors advise them to avoid rice and take wheat instead. So I was naturally surprised by the revelation in the Hindu dated 5-12-19
Name Protein Minerals Fibre Carbohy- Calcium Phos
Rice, parboiled hand pounded
8.5 0.9 77.4 344 283
Wheat flour, whole
12.1 2.7 1.9 69.4 48 355
Wheat flour, refined
11 0.9 0.3 73.9 23 121
Brown bread 8.8 – 1.2 49.0 18 -
White bread 7.8 – 0.2 51.9 11 -
Oat meal 13.6 1.8 3.5 62.8 50 380
Ragi 7.3 2.7 3.6 72 344 283
Compare the calcium content in polished rice and parboiled rice. The latter is prepared by boiling the paddy and then husking it. This process ensures that the calcium in the thin bran cover over rice is absorbed by the seed inside. Locally, we have matta rice, brown in colour and very hard to cook. If this variety is mixed with methi seeds (uluva) we can make dosa, which is even better than wheat.
S o think of it.
Bran is a rich source of Vitamin B complex and can be eaten as bran cake, obtained by baking bran mixed with grated coconut.
